Chia Pudding with Coconut Fried Bananas
Chia is native to central and southern Mexico, and was considered a staple food for the Aztecs and Mayans. It’s packed with fiber, omega-3’s, protein and antioxidants. I love all of the textures in this dish, as well as it being a wonderful alternative to an egg- based breakfast. It provides you with approximately 14 grams of protein and 22 grams of fiber- a great way to start your day!

Ingredients
- 1 cup almond milk (homemade best)
- ¼ cup chia seeds
- 1 ripe banana
- 1 tbsp. coconut oil for frying bananas
- 1-2 tbsp. shredded (unsweetened coconut)
- 1-2 tbsp. crushed almonds or other nut of choice.
- 1 tbs. unsweetened cocoa nibs
- * any berries or seasonal fruit that you like
Directions
- Mix almond milk and chia seeds in a bowl thoroughly to combine. Best if refrigerated overnight to set.
- Heat oil in small sauté pan
- Slice banana and fry in oil on medium heat until slightly brown on both sides.
- Remove bananas from pan (discarding of excess oil).
- Place bananas in a line on one side of bowl, then shredded coconut, cocoa nibs, nuts and fruit. Enjoy!
