Paleo Blueberry Pancakes
I've been experimenting with different paleo pancake recipes for about a year now & this version was a hit! They were inspired by Practical Paleo's Fluffy Banana Pancake recipe.
I think one of the main reasons this recipe is a success, is that it uses green/unripe bananas. This gives it a savory flavor similar to that of conventional pancakes. I didn't have totally green bananas today (they were just beginning to turn yellow) & they still turned out great. You can also use ripe bananas but the batter will have a more sweet taste and you may have to use more coconut flour to thicken the batter.
Ingredients:
- 3 green bananas
- 8 medium eggs (or 7 large)
- 3 tbsp. arrowroot flour
- 3 tbsp. potato starch
- 3 tbsp. coconut flour
- 1/2 tsp. baking soda
- 1/2 tsp. lemon juice (this activates the baking soda)
- 1-2 tsp. melted coconut oil
- blueberries (optional)
- pinch of salt
Directions:
Blend all ingredients (except for blueberries) in a powerful blender then let batter rest for approximately 2-3 minutes. Pour batter into desired pancake size onto a hot non-stick skillet (medium/medium-high heat).
Add 5- 6 blueberries per pancake the let cook for approximately 2-3 minutes per side or until golden brown.
Add maple syrup, honey or butter to taste and enjoy!
